Recipe for Chicken Fingers (snacks)

Ingredients

  • Boneless chicken breasts, ½ inch cubes
  • Cheese, ½ inch cubes 200 grams
  • Garlic, chopped 4-5 cloves
  • Salt to taste
  • Black peppercorns, crushed 4-5
  • Fresh coriander leaves,
  • chopped 1 tablespoon
  • Lemon juice 2 teaspoons
  • Egg, beaten 1
  • Tomato ketchup 1 tablespoon
  • Breadcrumbs 1 cup
  • Oil to deep fry
  • For sauce
  • Mayonnaise 6 tablespoons
  • Tomato ketchup 3 tablespoons
Instructions
  1. Put the chicken cubes in a bowl. Add garlic, salt, crushed peppercorns, coriander leaves, lemon juice, egg and tomato ketchup. Let them marinate for half an hour.
  2. Place the breadcrumbs in a plate.
  3. Take toothpicks and string two chicken cubes on each with a cheese cube between them.
  4. Roll them in the breadcrumbs so that they are well covered all around. Dip them in the remaining marinade and once more roll them in the breadcrumbs to double coat. Press lightly so that the breadcrumbs stick firmly.
  5. Heat sufficient oil in a kadai till hot. Slide the chicken and cheese fingers and deep fry till golden and crisp.
  6. Drain and place on an absorbent paper.
  7. To make the sauce mix mayonnaise and tomato ketchup in a bowl.
  8. Arrange the chicken and cheese fingers on a serving plate, garnish with a sprig of parsley and serve hot with the sauce.

Recipe for stuffed tomatoes using meat

  1. A very nice dish for a luncheon, or Sunday evening or informal supper, is to fill tomatoes with a force-meat made with cold ham and mushrooms.
  2. For 1 dozen nice firm tomatoes, scalded and peeled, take 1 small cup of finely minced ham, the same amount of chopped mushrooms, and half of fine bread crumbs.
  3. Mix with it the juice and pulp scooped from the centre of the tomatoes, season with salt and pepper, a dash of cayenne, 1 tablespoon of finely minced parsley, and 2 tablespoons of melted butter.
  4. Mix all thoroughly and fill the tomatoes.
  5. Bake twenty minutes in a hot oven, basting the top occasionally with melted butter.
  6. Serve hot.
  7. Cold chicken or veal, or any nice cold meat may be used with or substituted for the ham.
  8. Or use any nice cold fish like bluefish or whitefish.
  9. For a lunch dish they may be chilled after baking, and served with mayonnaise dressing on top

Recipe for baked potato wedges

Ingredients

  • Potatoes     6 medium
  • Salt     to taste
  • Garlic, chopped     4-6 cloves
  • Mixed herbs     1 teaspoon
  • Red chilli powder     ½ teaspoon
  • Olive oil     6 tablespoons
  • Lemon juice     2 tablespoons
Instructions
  1. Preheat oven to 180°C.
  2. Cut potatoes into wedges without removing the skin. Blanch in hot salted water. Drain into a bowl.
  3. Add salt, garlic, mixed herbs, red chilli powder, four tablespoons olive oil and mix.  Add lemon juice and mix.
  4. Place the wedges on a greased tray. Drizzle the remaining olive oil over them.
  5. Place the tray in the preheated oven and bake for fifteen to twenty minutes.
  6. Serve hot.

While I will leave how much I love the Jot business model and innovative way of introducing the not so geeky internet user to the world and simplistic power of a wiki .... this post is to introduce our family site built using the Jotspot's unique wiki solution.

We get to use the site to maintain the family tree, the family calendar and share tit-bits among the family members..... since the access to it is by invitation only you will ofcourse not be able to view the link :) .. i.e if you are not family...... but do post a comment if you want the access to it .... & use this link if you wanna explore & start your own Family Site.

Scorpio Stings

After a lot of deliberations, in June we finally got home a Scorpio from Bhasin - who happens to be the largest North India dealer for Mahindra. My bro, the car buff that he is, could go on and on about how great the car, sorry jeep, sorry SUV it is but that i will leave for his blogging. I was painfully surprised at the lack of customer service skills these guys had and the amount of arrogance shown by the dealer employees. It was as if they were doing us a favor by letting us get hold on the darn thing. I guess this is where Mahindra needs to learn a lot from the likes of Hyundai and Honda or even Maruti.
More gory tales of how scorpio has stung us badly to follow. Keep watching this space.

Marriage

Inspite of all the craziness and problems that marriage brings, why do we get married?
It's not for pleasure or for passion, it's bcos we need a witness to our lives.
There's a billion people on the planet... I mean, what does any ones life really mean? But in a marriage, you're promising to care about everything. The good things, the bad things, the terrible things, the mundane things... all of it, all of the time, every day. You're saying 'Your life will not go unnoticed because I will notice it. Your life will not go un-witnessed because I will be your witness'.""

I have kept thinking and coming back to this simplistic definition from Shall We Dance?
While i agree with the gist of it, i feel we expect our spouses to be a little more than mere witness to our lives, little more "a partner in crime" than a witness. But it is also true that you may not see your spouse as an accomplice to all that happens in your life, but witness he/she surely is.

mms escapades

dont get excited .. this has nothing to do with the rather (in)famous dps kiddos trying out nokia capabilities to their be(a)st abilities...but instead has to do with budding multimedia talents in the family.
well, nikhil for one has decided to pursue multimedia course from oxford university of all places. just got to see some interesting things he did with our photographs. so i have invited him to put his "art" here. atleast it will make the site more colorful than the drag i write.
heres hoping that we get to see some of his creations here. & nikhil dont forget to put the family tree here as well
